Instant Pot Hard Boiled Eggs

It’s no secret I love spending my free time in the parks. One of the ways I am able to free up a little extra time is to meal prep now and then.

I really love making a batch of hard boiled eggs in the beginning of the week for a quick meal on the go. They are a perfect protein for lunch or dinner and can be easily chopped up and added to a salad or a sandwich.

Making them in the instant pot is my favorite way to prepare them. It’s fast and easy… I can usually make these in 15 minutes start to finish.

1. Place the rack or metal basket in your instant pot. Add eggs to the rack or basket, pour in 1 cup cold water and seal the lid.

2. Press manual button and set time to 5 minutes (it should show high pressure).

3. Once time is up, let naturally release 5 minutes. Once done, quick release steam and place eggs in an ice water bath for at least 5 minutes. This is the step that makes me love my basket. I can easily lift it out of the instant pot and place it in an ice bath. I like to use a glass pie plate filled with water and ice to cool the eggs.

4. Peel and enjoy!

I like to store my eggs in a ceramic produce container in the refrigerator.
