Easy Peasy Lemon Squeezey Oreo Truffles 


Ok, I’m back. 

I’ll be the first to admit that I have been having way too much fun this summer. 

The weather is warm, the sun is shining, and there are so many new places to explore. That’s my only excuse for being MIA with my blog lately. 

I’ve squeezed in a few Disney days, hosted some fabulous guests, and made some new friends. I promise I have been keeping up with my chores, too! 😉 

Now that I finally have a free day to sit down and write I thought that I would share a quick and easy recipe for a delicious summer dessert. 

I made these a few weeks back for the Summer Social in our building and they were a hit. Best part-No baking required. 

For this recipe you will need:


Open your Oreos 


Place them in a Large Ziploc Bag


Use a rolling pin to crush your Oreos. I haven’t been able to find our rolling pin since we moved. No worries! I was able to roll a pink juice glass over the Ziploc and crush those Oreos right up.


Next open your Cream Cheese 


And cut your Cream Cheese into 1 inch squares 

Now it’s time to grab your mixer


You don’t need to have a mixer for this recipe but you will give your arms a good workout mixing this by hand. 

Toss your cookies into the mixer  😉


Then add your Cream Cheese 


Now it’s time to mix it up 



After your cookies and cream cheese are combined it should look like this.


The next step is to roll the cookie mixture into small balls 


I like to use a cookie scoop for this 


Once you have the balls rolled pop them into the freezer for 20 minutes 


While the balls are in the freezer you can start melting the chocolate. I usually melt the chocolate chips in the microwave for 30 second intervals stirring in between with a fork until they are fully melted. 


*DISCLAIMER* 

I don’t normally use these white chocolate chips from Target. I’m strictly a Ghirardelli Girl. I had a friend that raved about the taste of these and I thought I would give them a shot. I did enjoy the flavor but they were VERY difficult to work with and didn’t melt well at all. 


I’m going to continue to use Ghirardelli chocolate chips in the future. 


After your chocolate is melted remove your balls from the freezer and roll them in the chocolate to coat. 

Pop the chocolate covered balls back into the freezer until 10 minutes before you would like to serve them to your guests. 

Now you are ready to share!
