Carmelized Peach Caprese Salad
The minute the weather changes to spring I instantly start craving fresh salads and lighter fare.
This easy Carmelized Peach Caprese can be thrown together in minutes and make you look like a Food Network Star.
For this recipe you will need:
Start with a quick trip to the market for fresh peaches, basil, mozzarella, and the rest of the ingredients.
I love that I am able to purchase a local basil plant with its exact growing location at our local Harris Teeter. You can’t get any fresher than that!
Back at home it’s time to gather my ingredients and start slicing. The ball of mozzarella that I normally use comes pre sliced but I often slice those slices in half to make smaller bites for my guest.
Once my peaches are sliced I place them in a large bowl and coat them evenly with the brown sugar.
Set aside and melt your butter over medium heat in a large pan on your stove. When your butter is melted completely add your peaches.
I cook the peaches until golden and camelized about 2-3 minutes per side.
Let the peaches rest a couple of minutes and cool off a bit on a plate before assembling your salad. You don’t want your peaches to melt your freshly chilled mozzarella.
Now that your peaches are cooled, it’s time to assemble. Just alternate slices of mozzarella, basil leaves, and peaches in a straight line.
Drizzling extra virgin olive oil and balsamic vinegar over the top and adding sea salt and cracked pepper.
Or toss all of your ingredients in a bowl and mix together with tongs. Serve in a little stack on a chilled plate.
I invited my friend Sarah over to give this recipe a try and used this fun spring Lilly Pulitzer table setting.
We ended up eating off our chilled salad plates but it is always fun to decorate in Lilly.
Sarah absolutely loved the salad.
Lemon flavored Oreos made for the perfect dessert to finish our meal.

I’m a licensed cosmetologist so I can get my hands on just about any product out there but my favorite is Pureology hydrate. It’s the shampoo and conditioner in the purple bottles. It leaves my hair feeling light weight and bouncy but it gives my hair the moisture it needs to look shiny and healthy. They are pricey but a little goes a long way. A dime to a quarter size is all you need. I hope this helps! Take care!
